Yes, you can take a partial payment on a sale and save it as an unfulfilled sale. Refer to our In Store Order Fulfillment in Retail POS (X-Series) for steps on how to do this.

You can also put customer purchases On Account up to a set limit. Refer to Creating On Account sales and Setting On Account limits for more information.
